Classic Chicken Piccata

Delizioso! Fresh lemon and salty capers give this classic Italian dish its distinctive flavor. Chicken cutlets are cooked until they’re golden brown, then simmered in a light lemony sauce until tender. For a more filling meal, serve over pasta noodles—angel-hair pasta, spaghetti, or linguine.

1½ pounds chicken cutlets

½ teaspoon kosher salt, plus more for seasoning

½ teaspoon freshly ground black pepper, plus more for seasoning

⅓ cup all-purpose flour

1 tablespoon finely grated lemon zest

2 tablespoons extra-virgin olive oil

1 tablespoon unsalted butter

3 garlic cloves, minced

½ cup white wine

½ cup Basic Chicken Stock or store-bought

¼ cup lemon juice

2 tablespoons capers, drained

¼ cup chopped fresh Italian parsley

1.Pat the chicken cutlets dry with paper towels and season with salt and pepper.

2.In a shallow bowl, combine the flour and lemon zest. Dredge the chicken in the flour, shaking off any excess, and place it on a plate.

3.In a large skillet over medium-high heat, heat the oil and butter for 2 to 3 minutes, until the butter is foamy. Add the chicken and cook for 3 minutes per side until golden brown. Transfer the chicken to a plate.

4.Add the garlic and white wine to the skillet to deglaze, stirring to scrape up any browned bits from the bottom.

5.Add the chicken stock, lemon juice, and capers and bring the sauce to a simmer. Taste and season with salt and pepper, as needed.

6.Return the chicken to the skillet, cover the skillet, and reduce the heat to low. Cook for 5 to 6 minutes, until the chicken is tender and cooked through. Garnish with parsley and serve.
